Veggie Box Week 5

I’m slowly catching up, this is the box from 7/17.  This was a fun week to get because we were having a barbeque on the following Saturday.  I was trying to figure out some recipes where we could use some of our box items.

The barbeque was fun.  I had my 20 year high school reunion this summer, but I didn’t go to it.  I thought that I was already in touch with the people I wanted to be in touch with (just a handful of close friends) and wouldn’t really have a good time at the reunion. 

One of my friend did go, and forwarded me some pictures.  And I got sentimental.  So, I asked LushMan if we could have a barbeque and invite some people.  I don’t know if he knew what he was getting himself into.  But I’ll save all that for another post.  Right now, we’re onto the veggies and what I prepared with them.

Kale. Again. Oh kale. Last year I think I had a lot of it go to waste not knowing what to do with it. But this year, I’m getting better.  Some I threw into a pasta salad-  not for the party, just for us one evening.  And then my mom suggested blanching some and freezing it to use for a vegetable stock. 

 

I did not use the lettuce for the party either.

 

Turnips. There was a problem this week with the turnips and radishes. One of the volunteers threw them all together instead of bagging them separately. I guess I’m not the only person who was confused by them.

Sweet onions

 

Cabbage. I made a coleslaw with this. Not for the party, just for us.

 

Cucumbers. We ate some just sliced, but then I also used some in a recipe I had for the party. It was an orzo salad with cucumbers, green beans and dill. Delish.

 

Summer squash. Since we had so much, we decided to grill it for the party. It went very well.

Beets. I made a raw beet salad that was from my CSA’s cookbook for the party. It seemed to go very well. I made another batch to take to my parents’ house the next day, but my mom said she would have cooked the beets first. Personally, I prefer them a little tart and crunchy.

 

Eggplant. This was another vegetable that overwhelmed me last year and to be honest, I’m still a little overwhelmed. I’m not so much a fan so it is hard to get excited to make them. Especially because I know there is a lot more to come in the next few weeks.
